    随着食品种类的多元化,不同人群的食品感官嗜好性也出现明显差异,做到实时、客观、精准地评估不同人群的感官嗜好性仍比较困难。设计一种基于模糊数学的感官嗜好性评价软件,帮助食品研发人员及时地评估特定人群的食品感官嗜好性,准确掌握食品感官品质特性具有重要意义。本研究设计的软件包括后台管理和APP端两部分。后台管理提供权限系统、分类管理、产品管理、因素集、评语集、报表展示等功能;APP端收集被调研者信息及评分数据,并展示食品分类、新菜预告、具体食品信息等。软件解决了食品感官评价数据处理量大、可操作性差的问题,降低了人的主观性影响,减轻了传统纸质评价数据录入的工作负荷,有效提升了嗜好性评价结果的科学性、合理性和客观性。研究开发的软件旨在通过实时、准确评估不同人群对特定食品的感官嗜好性,为改进食品配方工艺、优化感官特性提供数据支撑。

    Abstract:

    To address the increasing diversity of food products and the significant differences in sensory preferences among different populations, a real-time, objective, and accurate evaluation of sensory preferences remains challenging. Consequently, this study presents the design of software for sensory preference evaluation based on fuzzy mathematics, aimed at aiding food developers in promptly assessing the sensory preferences of specific groups and accurately understanding the sensory quality characteristics of food products. The software developed in this study comprises two components: a backend management system and a mobile application. The backend system provides functionalities such as user permissions, category management, product management, factor sets, comment sets, and report displays. The application collects information and rating data from respondents and displays food categories, new dish previews, detailed food information, etc. The software addresses issues related to large volumes of sensory evaluation data and poor operability, reduces subjective bias, lessens the workload associated with manual data entry from traditional paper-based evaluations, and effectively enhances the scientific rigor, rationality, and objectivity of sensory preference evaluation results. It is concluded that the software provides real-time and accurate assessments of different populations' sensory preferences for specific foods, offering data support for improving food formulations and optimizing sensory characteristics.
